Oat-y Chocolate Chip Walnut Cookies

Oat-y Chocolate Chip Walnut Cookies! 
Normally, I would say it's not the best idea to eat a cookie first thing in the morning, HOWEVER, theeeeese cookies, you sure can! I whipped these up right after dinner last night, when I wanted to get my apron on and see what kind of cookie creation I could come up with. 

I had pinned a recipe awhile back from chelseasmessyapron.com, so this girl inspired me to get my food processor out and make flour from oats as the main ingredient! YUM.
Enjoy and make sure to ration these out ;).....sometimes we like to say "oh, but they are healthier than normal cookies sooooo I'll eat 4 instead of 1." Try and enjoy the oaty, chocolatey, nutty flavor in each bite and stop at 1. Then, you'll have more for later (I know, easier said than done)! :D 

Ingredients: 
1 1/2 cup oat flour
2 t vanilla extract
1 egg
1/4 c coconut sugar (can sub for brown sugar for a more traditionally sweet cookie)
1/2 c coconut oil (softened)
1/2 t baking soda
1 t cinnamon
Dash of salt

Optional add-ins, but delicious: 
1/2 c mini semi-sweet chocolate chips
1/2 c walnuts (finely chopped)

Directions: 
1. Blend oats in food processor until flour-like.
2. Whisk together vanilla, egg, coconut sugar & coconut oil.
3. Stir in oat flour, baking soda, cinnamon & salt.
4. Fold in chocolate chips and walnuts.
5. Cover and chill for 30 mins-1 hour in fridge.
6. Roll into balls and bake at 350 for 10 mins. Let cool for a few mins on the baking sheet since they will be soft and a little crumbly while they are fresh out of the oven.
